Five centuries of flavor and tradition

The achira from Huila is much more than a cookie. It carries the memory of indigenous peoples who cultivated the Canna edulis plant along the Magdalena River.

Today, more than 60 families from different municipalities have united to preserve this legacy and bring it to the world.

The artisanal process

From the earth
to your hands

Cultivation
The Canna edulis plant grows in the Huila valleys. Rhizomes are hand-harvested 8-12 months after planting.

Starch
Rhizomes are washed, crushed and sun-dried to extract pure starch, the fundamental base of achiras.

Mixing
Starch, fresh white cheese and egg. Three ingredients. A recipe kept for generations.

Wood-fired oven
Wood-fired baking gives each achira its unique texture: crispy outside, soft inside.
